coconut & mocca icecream

(Yeah - so I flogged most of this recipe from the back of a sugar packet... that doesn't make me a cheat - just resourceful... yeah - that's it, resourceful!) It's a bit tricky, but it's sooooo worth it.

You will need...

1/4 cup of ground espresso coffee
1 cup of coconut cream
6 egg yolks
1 cup Demerara sugar
600mL thickened cream
2 handfuls Cadbury's Velvet Chocolate Curls

First up...
Clean your kitchen... make sure your flatmates see it clean... because after making this, it ain't ever going to be the same again!

Then you need to plop the coconut cream into a saucepan with the espresso and heat it up till it thins a little bit, but don't let it boil. I mean it... you let it boil and it will get a nasty, bitter after-taste. You will ruin it, and it will be all your fault!!

OK. Then you chuck the egg yolks into a heat-resistant bowl. (That's like ceramic, or glass. You can use metal, but the edges get hot. Don't use plastic, you'll melt it.)  Add the sugar... now you hold the bowl over a saucepan of simmering water. Don't let the bowl touch the water... if you do, ravenous monkeys will hunt you down to the edges of the earth and suck out your eyeballs.

Stir it until the sugar melts. DON'T HEAT IT TOO FAST... you'll get an omelet. Heat it slow, stir it lots, until there isn't any more lumpy bits of sugar.

Once that's thickened nicely, take him offa the stove, (make sure to remember to turn off your stove... if you want to know what happens if you don't, I'll tell you...) and stir in the the coffee&coconut cream.  You then need to cool that off. I stick it in the fridge for a few minutes... find something else to do, get really distracted, and then wake up in a few hours.

Once it's cool, then whip up the cream. If you are feeling particularly evil, use double thick cream... its soooooo good!

Fold the cream through the mix, then add the chocolate curls... I put in about 2 handfuls...

Pour the mix into an empty ice-cream container... it should almost fill a 1 litre container.

Pop him in the freezer, and leave it there over night.
Or, (time to gloat here) if you are lucky enough to own a ice-cream maker, make it as above, but don't whip the cream, chuck the mix into the ice cream maker, and you'll have it in 15 min!

Now this is the bit where you bribe your flatmates to clean up the mess. Yaaay! You might also need to invest in a locked box to keep it in. This stuff disappears unbelievable quickly if you leave it unattended.
